Whole turkey 325°F/165° C 30 min/lb
Whole chicken 4 to 8 lbs 375°F/190° C 20 to 30 min/lb
Whole capon 4 to 8 lbs 375°F/190° C 20 to 30 min/lb
Whole domestic duck 375°F/190° C 20 to 25 min/lb
Whole wild duck 350°F/177° C 18 to 20 min/lb
Whole goose 325°F/165° C 20 to 25 min/lb
Whole hens 18 to 24 oz. 350°F/177° C 50 to 60 min
Whole quail 425°F/220° C 20 to 25 min
Poultry minimum internal temperature should be 165 °F in the inner thigh, the inner wings and the thicken side of the breast.
For stuffed poultry add 10 to 30 min, make sure that the internal temperature reaches 165 °F in the center of the stuffing.
