Pork stew with dry beans

There are lots of different ways to make that stew I will be sharing my personal way of making the pork stew with dry beans

Things you will need

• Dry pink beans

• Pork tenderloin

• Lemon juice

• Salt

• Garlic powder

• Oil

• Tomato paste

• Red bell pepper

• Fresh parsley

Ingredients: 6-8 servings

• 1 lb of pork tenderloin

• ¼ teaspoon of lemon juice

• 1 teaspoon of garlic powder

• 1 tablespoon of oil

• 3 tablespoons of tomato paste

• 1 red bell pepper slice in thin vertical strip

• 1 cup of minced parsley

One: Boiling the beans

• Add 3 L of water in a pot.

• Then add 1 ½ cup of dry beans, boil for 2 hours on medium high.

Tips one: you will know that the beans are cooked when they are tender; when they can easily be crushed.

Tips two: always check your dry beans to see if there aren’t any rocks in there; if rocks are found, wash the beans before boiling.

Two: seasoning the meat

• Around 1 h 30 min while the beans are still boiling; cut pork into 1 or 2-inch piece.

• Seasoning with1 ¼ teaspoon of salt and ¼ teaspoon of lemon juice, ¼ is the equivalent of the tip of a teaspoon.

• Add the pork to the boiling beans, then add 3 tablespoons of tomato paste.

• 1 tablespoon of oil and spread 1 tablespoon of garlic powder.

• Mix and stir for 1 min and let cook for 30 to 45 min more with the beans.

Tips: From the top of your middle finger to the first line is an equivalent of 1 inch.

Note: it is best to melt the tomato paste in a small amount of hot water taking from the beans before adding it to the boiling beans, this way the tomato paste will melt much faster.

Three: Adding the red bell pepper and the parsley

• After everything is cooked; turn off the heat and add the bell pepper strips.

• After 5 min add the minced parsley, stir and serve.
