White bean soup

This white bean soup is delicious and yet full of fiber and protein; the added spinach also contains fiber, which increases the amount of fiber in the soup.

Things you will need

• White beans

• Spinach: optional

• Sour cream

• Hydrogenated soy margarine

• White onion

• Garlic powder

• Salt

Ingredients: 5-7 servings

• 3 cups of white beans

• 2 cups of spinach: optional

• 3 tablespoons of sour cream

• 1 tablespoon of soy margarine

• 1 medium white onion

• ½ tablespoon + 1 teaspoon of salt

• 1 tablespoon of garlic powder

Instructions

STEP ONE: Boiling the beans

• Add 5 L of cold water in a container

• Then add 3 cups of white beans in the cold water

• And let the beans boiled over medium-high heat for 1h30 min, until fully cooked and tender.

when cooking dry beans always check every 15-30 min to see if the water does not dry depending on the heat intensity and the amount of water added.

you will know that the beans are done when it is tender or can easily be crushed.

In this recipe I added the amount of water needed for the beans to be fully cooked without the need to add more water, even still, you need to pay attention to the beans every 30 mins because some oven heat is more intense than others.

STEP TWO: preparing the onions and spinach

• Thinly chopped 1 medium onion, set aside

• Rinse 2 cups of spinach and set aside as well

TIPS: always remember to prepare your ingredients before starting cooking, this will make sure that you have everything ready before you start and the cooking will run smoothly without the need to rush.

STEP THREE: blending the white beans

• After white beans are cooked and tender, add them, cup by cup in a blender, blend until smooth.

• After blending, add bean soup to a clean container and place on the oven top, on medium heat.

• While beans sauce starts to heat up, around 3-5 min

• Add 1 tablespoon of soy margarine and stir

• Add the onions and slowly, stirring the soup, let onion cook for 1-2 min

STEP FOUR: Adding the sour cream

(melt sour cream before adding it to the soup)

• Add 3 tablespoons of sour cream in a bowl

• Then melt the sour cream in half cup of the white bean soup, stir, until sour cream is completely dissolved.

• And after, add the sour cream sauce in the bean soup, by slowly mixing and stirring

• Next, spread ½ tablespoon of salt over the sauce, stir and taste to see if this amount of salt is more your liking, if not add another teaspoon of salt, and slowly stirring until the salt is well dissolved.

STEP FIVE: adding the spinach: optional

• Turn off the heat

• Then add 2 cups of spinach, and spread 1 tablespoon of garlic powder over the soup, mix, and stir,

• Let the soup stand for 5 min before serving
